Buttery Lemon and Herb Roast Chicken with Potatoes

So I've been thinking about roast chicken the past few days and I decided to cook it for my Saturday lunch. 

I searched online for recipes and I just incorporate what I read from different recipes and put them in my chicken.

I used a whole lemon and garlic as the stuffing for the chicken. And I rubbed the chicken with a butter, pepper, salt and mixed herb mixture. I baked the chicken breast-side up in the oven at 190°C for 1hr 20minutes. I basted the chicken in intervals of 20 minutes.




Overall the chicken was very tasty. I only ate the chicken after it was sitting there for an hour so I don't know if that dried the chicken breast up a little. But maybe next time I will reduce the cooking time to about 1hr and see if the chicken breast will be more moist.

We are now already in the 4th week of 2016 and I've been seeing a lot of 'new year resolutions' post all over the Web and social media. I've never had a new year resolution plan ever in my entire 30 years of living. So I asked myself, should I have one this year? Is this the year to make a difference? Is this the year to do something different? Should I learn something new? 

I recently got married in mid-November 2015. As a working wife, I work on most days; Monday to Friday to be exact. My working hours are 8:30 to 5:30. So my weekends are fairly free. My husband on the other hand, works as a teacher so he's usually home by lunchtime. Considering my long working hours, I'm lucky to be in a house with my mother-in-law who does the cooking and a helper that does the chores around the house. So I haven't actually cooked a meal for my new family. I'm not good in cooking. But I love to cook and I love watching cooking shows. And I thought to myself, maybe I can start cooking for my husband so he can come home to my cooking on Saturdays when he gets off work.

I've decided to try and cook something every Saturday when I'm not working. This way I'll be  doing something I like and at the same time learn to cook more things and put some heart warming dishes on the table. Hope I keep my weekly agenda going for the whole year. 

As a start for this new blog, I'll be sharing pictures of 2 dishes that I cooked over the past month.
